Grilled Romaine Salad, Easy & Delicious, Possible Camping Food?

I stumbled upon this recipe on the Food Network. I've made it several times now and find it easy to make and super delicious. You could do this while camping if you've got a surface where you could do the chopping.

 

What you need:

One Heart of Romaine Lettuce per person

Olive Oil

Salt & Pepper

Balsamic Vinegar

Croutons

Shredded Parmesan Cheese

1. Preheat your barbeque grill to a low setting

2. Cut the lettuce heads in half lengthwise, leaving the core in to keep them from falling apart.

3. Drizzle with Olive Oil, sprinkle with Salt and Pepper

4. Lay the lettuce on the preheated grill, cut-side down, cook for about 1 minute.

5. Turn them over, cook for 1 to 2 more minutes until they start to look wilty.

6. Remove them from the grill. Cut off the core ends. Chop up the lettuce into bite-size pieces.

 

7. Sprinkle with the parmesan and croutons and balsamic vinegar to taste. Add more oil if needed.

 

8. Toss it all together to coat the lettuce with vinegar, oil, cheese and distribute the croutons.

9. Eat!

I've been doing something similar to this for a few years. Layer young brie cheese, hummus and asparagus between each leaf of romaine, tie it off with cooking twine, lightly rub with butter or drizzle olive oil over it and grill until the brie is pliable but not melting, pull it off, cut and serve.

Perfect timing. My wife said she wanted salad for dinner. I think I will add grilled chicken to this and give it a try. Gotta have meat!!!
